Gorge on Parma’s famous parmigiano-reggiano and prosciutto, Bologna’s fresh spaghetti alla bolognese and mortadella, and Ferrara’s grana cheese and salama . Although the Romans originally settled this region, most of the visible ruins are medieval, and today’s travelers find urban scenes that have escaped the oppressive tourism of other major Italian cities.
