Certificate and degree programs available. More tourist-friendly options include two- to four-hour workshops and short courses that range in length from two days to one week.   • Promenades Gourmandes: If the corporate Cordon Bleu is too impersonal for you, Paule Caillat's cooking classes and market tours are just the opposite. Capped at eight students, classes are scheduled on request and take place in a home kitchen in the Marais in either French or English.
