Things I have eaten in San Cristóbal:
1. A falafel sandwich
2. Tagliatelle all'amatriciana
3. Argentine steak
4. Homemade ravioli in a mushroom cream sauce
5. Crepes with mango sauce
6. Pad Thai
7. Queso fundido (tasty melted cheese, essentially) with grilled peppers
8. Etc.
I did not make this list to rub my good food fortune in your face. If I had wanted to do that, I would have pointed out that not only were all those meals delicious, but also Let's Go paid for them. I made this list to illustrate the fact that San Cristóbal must be the culinary capital of all of southern Mexico. Somehow, it has used its colonial streets and verdant mountain backdrop--not unique features in Chiapas and Oaxaca, really--to lure armies of Italians, Israelis, Argentines and Lebanese who know what to do in a kitchen. Not to mention, of course, the skill of the home-grown Mexican chefs. I don't have any particular insight into this situation; I just thought you all should know.
