Poor Man's Creme Brulee |
Dear readers, meet sütlaç ("sewt-la-ch"). Sütlaç is like poor's man's creme brulee, with all of the good taste and none of the French pretension. Don't be a noob and get it baked, or firin, for the full experience.

On top, it's a gorgeously burnt layer, like spots on a cow or a huge mole. Ok, maybe that wasn't too appetizing. But dig your spoon just a tad deeper, and you'll strike rice pudding, the grains melted into a sweet, velvety, and vanilla-y cream. Usually, there'll be chopped hazelnuts sprinkled on top, adding just that right amount of crunch. Eat it cold, preferably after a hot day out trekking across the city, or with a soothing cup of çay (tea). My newfound love for sütlaç is the reason half the restaurants on my street know me so well; I walk in, greedily eye their dessert display, and point to my favorite cup of pudding for take out - a daily habit.
It's also why, despite hours of walking every day and a modest spending stipend, I'll be leaving Istanbul a few pounds heavier.
